Which food may be re-served to customers?

Only unopened prepackaged food may be re-served to customers. This includes items such as condiment packets, wrapped crackers or breadsticks, and bottles of ketchup and mustard. Uneaten bread, unused whole fruit garnish, and unused, uncovered condiments should not be re-served to customers. These foods can be easily contaminated by bacteria. Once food has been exposed to the air, it is no longer safe to eat.
